What order do the pages come out in?

The order you selected the files in. Pick them in the order you want them, or drop them in that order.

Should I use “Match each image”?

Yes, if you are turning scans or screenshots back into a document: each page becomes exactly the size of its image, with no margins and no letterboxing. Choose A4 or Letter when the result is going to be printed.

What is the difference between fit, fill and stretch?

Fit puts the whole image on the page and leaves space around it. Fill covers the page and crops whatever does not fit. Stretch distorts the image to the page edges, which is almost never what you want but is there when it is.
